Probiotic-Rich Coleslaw

This coleslaw is rich in probiotics from the kefir and apple cider vinegar, which can support gut health. The cabbage and other vegetables provide fiber, which acts as a prebiotic to feed beneficial gut bacteria.

Ingredients:

- 4 cups shredded cabbage (mix of green and purple for added nutrients)

- 1 cup shredded carrots

- 1/4 cup finely chopped red onion

- 1/4 cup chopped fresh parsley

Probiotic Dressing:

- 1/2 cup plain, unsweetened kefir

- 2 tablespoons apple cider vinegar (with "the mother")

- 1 tablespoon Dijon mustard

- 1 tablespoon honey (optional)

- Salt and pepper to taste

Instructions:

1. In a large bowl, combine the shredded cabbage, carrots, red onion, and parsley.

2. In a separate small bowl, whisk together the kefir, apple cider vinegar, Dijon mustard, and honey (if using). Season with salt and pepper to taste.

3. Pour the dressing over the vegetables and toss well to combine.

4. Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.

5. Stir again before serving and adjust seasoning if needed.
